My approach to most of the content here and on the podcast is that if I'm interested/passionate/curious/excited about something, you probably are too, and so I share about it. But the other day, I had a sudden thought: I HAVE NOT BEEN SHARING FALL RECIPES!!
Fall recipes are most certainly something I’m passionate about.
However you feel about pumpkin spice, fall baking is the absolute best. It’s so warm and cozy, and pumpkin is the classic ingredient for this time of year, even if you live in Texas and it’s 102 degrees out.
Today I’m sharing two basic recipes I have made forever and we LOVE them. I make them every year for our family’s annual Oktoberfest (this year is the 29th annual!) and for Thanksgiving.
Best Ever Pumpkin Bread
3 cups sugar
1 cup oil
4 beaten eggs
1 can (15 ounces) pumpkin3 1/2 cups flour
2 tsp baking soda
2 tsp (scant) salt
1/2 tsp cloves
1 tsp cinnamon
1 tsp allspice
1 tsp nutmeg2/3 cup water
1️⃣ Preheat oven to 350 degrees F. In a large mixing bowl, combine the sugar, oil, eggs, and pumpkin. Mix thoroughly.
2️⃣ In a separate bowl, stir together the dry ingredients and then add to egg mixture. Add 2/3 cup water and stir by hand until thoroughly mixed but still slightly lumpy.
3️⃣ Pour batter into two greased and floured 9-in.x 5-in.x 3-in. loaf pans. Bake for one hour or until tests done with a toothpick. Makes 2 large loaves.
Best Ever Pumpkin Pie
2 cans pumpkin (15 ounces each)
1 cup brown sugar
1 cup white sugar
1/4 tsp cloves
3 tsp cinnamon
2 tsp ginger
1 tsp salt
4 eggs
1 cup evaporated milk
1 cup heavy cream
1️⃣ Mix first 7 ingredients. Add beaten eggs and mix well.
2️⃣ In a small saucepan, scald the milk and heavy cream. Let cool slightly and add to mixture. Stir until smooth.
3️⃣ Pour into an unbaked 10 inch deep pie shell. Bake at 350 degrees F 1 hour and 20 minutes or until edges are set. Cool completely.
